Wise County Biscuits was established in Pittsburgh in 2017 by James Wolfe and Lena Laskaris.  After years of cooking in and operating restaurants in Washington, DC, James and Lena have returned to where they first met to put down roots.  Our food is inspired by the Appalachian home cooking of James' grandma Sallie, in her home, Wise County, Virginia.
